Spring Salad with Bresaola

Bresaola is an air-dried beef that originates from northern Italy. It has a similar silky texture as prosciutto but is not as salty. Bresaola can be treated like prosciutto and used to wrap grilled asparagus or served as part of a cheese plate.


Here it is used in a nice spring salad.


  • 1 head of butter lettuce or other greens
  • asparagus
  • english peas
  • shell pasta
  • CRESTED DUCK'S Bresaola
  • parsley
  • Parmigiano-Reggiano
  • salt and pepper

Clean and drain the greens. You can steam, saute, or grill the asparagus and peas. Cook and cool the pasta. Toss all the ingredients together and top with some fresh chopped parsley and Parmigiano-Reggiano. A simple dressing of olive oil and vinegar is great, but you can be creative and use any dressing you would like.
